If you book a hotel near Bloor street (which runs east-west) between Jane street (which runs north-south) and Mt Pleasant Rd (which runs north-south), it will take you minutes to get to the conference venue.

If you want to stay in the heart of downtown, look for hotels near the Young Subway Line or University Subway line on any of the following streets (Front, Adelaide, Richmond, King, Queen, Dundas, College, Spadina, University, Bay, Yonge or nearby side streets.  Stay away from Jarvis and Sherbourne south of Wellesley.

Accommodation easily found on the web.  There is plenty of choice to suit all budgets.  The Old Mill is expensive to stay in so you may wish to travel using the metro (see map). Use the Metro from your hotel to the Old Mill.  Downtown Toronto can be a bit more expensive.
